- Japanese Yellow Sea Urchin (Bafun Uni Bara), 250g
- Japanese Scallops (Muki Hotate), 1kg
- White Truffle Oil, 250g
- Capellini Pasta, 500g

Here is a step-by-step guide to re-create the restaurant-worthy experience in your own kitchen with our Truffle Pasta With Uni & Scallops Set:
Step 1: Prep
- Defrost the scallops by letting them thaw in the refrigerator for 3 hours
- Keep the scallops refrigerated with the uni and caviar until they are ready to be served
- Get ready a big pot of water and a large wide bowl with ice water for the pasta
Step 2: Cook
- Bring the big pot of water to boil before adding kosher or coarse sea salt to it – approximately 1 tablespoon of salt for every 4 liters of water
- Cook the capellini pasta in heavily salted boiling water for about 2 – 3 minutes until al dente or 1 minute longer than the package instructions so that the pasta does not get too hard when chilled
- Transfer the pasta to the bowl of ice water immediately and submerge it in the ice bath for about 1 minute until completely chilled
- Drain the pasta thoroughly
Step 3: Season
- Mix the cold pasta with 1 – 2 tablespoons of truffle oil in a large bowl
- Add finely chopped shio kombu, chopped chives and a drizzle of soy sauce or chive oil
- Toss until every strand is evenly coated
- Cover the bowl with cling wrap and refrigerate for 30 – 60 minutes to let the flavours meld if you have time
Step 4: Assemble
- Twirl the pasta into a neat mound on a plate using long tweezers or a carving fork
- Cut each sashimi-grade scallops into 2 – 3 slices and layer them on top or around the pasta
- Sear or torch the scallops lightly if you prefer a smoky flavour
- Place the fresh uni pieces carefully on top of the scallops
Step 5: Serve
- Finish with garnishes like chives or a final drizzle of truffle oil
- Add a spoonful of caviar onto the dish for a luxurious final touch
