Harvested from the deep waters of Hokkaido, our Japanese Sweet Shrimps (Amaebi) have great texture, sweet aftertaste and will melt in your mouth. Skilfully de-shelled by experts in Akasaka, Kyoto and packed neatly before being flash-frozen for freshness, each Amaebi is carefully peeled and prepped so it is ready to eat as sushi, sashimi or on its own. Sear them lightly if you prefer them cooked.
Here is a step-by-step guide to serve our Japanese Sweet Shrimps (Amaebi):
Step 1: Prep
- Defrost the Japanese Sweet Shrimp (Amaebi) by placing in an ice bath for 10 – 15 minutes
- Or thaw in the refrigerator overnight
Step 2: Serve Raw
- Pat the raw, peeled tails completely dry with paper towels
- Serve on ice with soy sauce and wasabi
- For sushi, place the shrimp atop vinegared rice
Step 3: Finish
- Add a dollop of caviar on the thickest part of the shrimp for an elevated taste
- For a different flavour profile, briefly marinate raw, peeled tails in sake, soy sauce and ginger
