Japanese Yellow Sea Urchin (Bafun Uni Bara)

Consisting of high quality Bafun uni, our Japanese Yellow Sea Urchin is meticulously placed to create the Bara pattern. Freshly caught, this uni has a bright beautiful yellow colour with firm texture and tastes like chestnuts.

Bara (ばら) means ‘woven’. Bara trays contain pieces of uni that may be of different sizes and shapes, which are arranged in a criss-cross or more ornamental fashion. While the appearance is less uniform, the quality can still be excellent and some chefs prefer it as the smaller pieces can offer a more concentrated umami flavour.
