We take great care in ensuring the high quality of our caviar. However, due to the unpredictability of nature, there may be periods where roe of certain sturgeons will not be available in quantities sufficient for sale.
Caviar should ideally be stored between -2 and -1 degrees Celsius. To achieve this, store your tins in the coldest part of your refrigerator on top of an ice pack. Storing your caviar in a freezer is not advisable, as extreme cold adversely alters the taste and texture of the roe.
If there is leftover caviar after the first sitting, gently smoothen the surface of the roe, place a plastic wrap over the open tin before closing the lid and refrigerating it.
An unopened can will remain fresh for 6 weeks or until the expiry date, whichever comes first. Once opened, caviar should be consumed within 5 days.
Simply insert a flat, thin instrument (like a caviar key or a coin) into the groove, between the base and lid, and twist gently.
After removing the caviar from your fridge, let it stand at room temperature before opening and serving.
There are many ways to enjoy caviar. Traditionally, it is presented without garnishes, on a spoon made from mother of pearl or bone. It should never be served with a metal spoon, as it contaminates the taste of the roe. To best savour the roe, roll the individual eggs on your tongue and roof of mouth before crushing gently to release their flavour.
